Domaine Bernard Defaix Chablis 2023

Domaine Bernard Defaix Chablis is a village wine built from four parcels of 30-year-old-plus vines on the left bank of the Serein.

Chablis lies well north of the rest of Burgundy, and its Kimmeridgian marl and cool continental climate give a Chardonnay quite unlike the Côte de Beaune — leaner, saltier and slower to open. Domaine Bernard Defaix is based at Milly, beneath the Côte de Léchet, and draws this village bottling from four parcels around Milly and Poinchy on the left bank of the Serein river. The vines are mature, comfortably past 30 years, and that age is the main difference between this wine and the estate’s Petit Chablis: more depth, more grip and more restraint. Fermentation is spontaneous and the wine then spends 10 months on fine lees in glass-lined tanks, a vessel choice that adds texture without any oak character. Bottled under screwcap.

Good now and will hold for four to five years. Serve at 10-12°C with oysters, scallops or a simply grilled snapper.
