Description
Domaine Bernard Defaix Chablis is a village wine drawn from four parcels of mature vines on the left bank of the Serein.
The Defaix family works around Milly and Poinchy, on the left bank of the river opposite the grand cru hill, and this village bottling comes from four parcels of vines more than 30 years old on Kimmeridgian marl. Compared with the estate's Petit Chablis, the extra vine age shows as more depth and a more classical, restrained shape. The wine ferments spontaneously and is aged for ten months on its fine lees in glass-lined tanks, with no oak at any point, which leaves the chalky, saline character of the site exposed. This is Chablis in its most recognisable form, and the domaine has been a reliable source of it for several decades.
Drink over the next three to five years with oysters, grilled flathead or a goat's cheese salad. Serve at 10-12°C.
