Description
Bernard Defaix Chablis Sans Soufre is a small-volume Chablis made and bottled without added sulphur.
The Defaix family farms in Milly, just outside the town of Chablis, and is best known for its premiers crus on the Côte de Lechet. This cuvée comes from a single parcel of 40-year-old vines in Milly, close to the cellar, which Didier Defaix says reliably gives fruit with enough structure to carry a zero-sulphur approach. Fermentation is with indigenous yeasts in stainless steel, handling is kept to a minimum, and the wine is bottled without fining or filtration. It is also bottled with a little more dissolved carbon dioxide than usual, which acts as a natural preservative. The result sits apart from the estate's standard Chablis: rounder and juicier, with a softer line and traces of fermentation still showing. Expect a slight haze and a touch of spritz on opening, so a short decant helps.
Made for drinking within a couple of years; serve at 10-12°C with oysters, grilled prawns or a fresh goat's cheese.
