Domaine Bernard Defaix Petit Chablis 2017

Petit Chablis is the most direct wine in the Bernard Defaix range, drawn from parcels on the high ground above Vaillons.

The Petit Chablis appellation covers the higher, flatter land that sits above and around the classified slopes, where the soils are shallower and the sites more exposed; the wines come in leaner and more sharply acidic, with less of the deep chalky texture found further down the hill. The Defaix domaine was founded at Milly in 1959 by Bernard Defaix and is now in the hands of his sons Sylvain and Didier, with Didier's wife Hélène. Its Petit Chablis parcels lie above Vaillons, across the valley from the estate's home slope at Côte de Léchet, and the whole estate has been certified organic by Ecocert for about fifteen years. Fermentation runs on natural yeasts and the wine is kept in temperature-controlled tank, with no oak and no lees stirring.

Drink young, within two or three years. Serve at 10–12°C with freshly shucked oysters, prawn cocktail or a plate of goat's cheese.
