Description

Petit Chablis from the harder Portlandian limestone of the plateau, made by a fourth-generation family estate at Milly.

The difference between Petit Chablis and Chablis is geological rather than commercial: the Petit Chablis vineyards sit on Portlandian limestone on higher, flatter ground above the valley, rather than the Kimmeridgian marl of the slopes, and the wine that results is leaner and more direct, meant for early drinking. Domaine Bernard Defaix farms about 27 hectares from Milly, immediately below the Côte de Léchet hill, with Didier Defaix in the vineyards and his brother Sylvain in the cellar. Organic conversion started in 2008 with Ecocert certification, which lapsed in 2016 after mildew forced conventional treatment. Fermentation is on natural yeasts, malolactic follows unforced, and the wine is raised in stainless steel with no oak.

Drink young, within two or three years of the vintage. Serve at 10-12°C with oysters, whitebait or a plate of goat's cheese.
