Description
Domaine Bernard Defaix's certified organic Petit Chablis comes largely from Kimmeridgian soil rather than the Portlandian ground on which most of the appellation is planted.
Petit Chablis usually occupies the flatter, higher land above the slopes that carry the village and premier cru vineyards, where the limestone is Portlandian rather than the Kimmeridgian marl of the classified sites. The lion's share of this bottling breaks that pattern, coming from a small parcel of Kimmeridgian soil. The domaine is quick to point out that the type of limestone matters less than the position: this parcel is very well sited on the slopes above Milly and Vaillons. In recent years two further small parcels at Poinchy and Beines have been added to build volume. The vineyards are certified organic, the wine is raised without oak, and it is bottled under screwcap, which suits a white made for freshness rather than long cellaring.
Ready on release and best over the next two to three years. Serve at 10-12°C with oysters, grilled sardines or a goat's cheese salad.
