Description
Domaine Bernard Defaix Petit Chablis is a Chablis-satellite white drawn mostly from Kimmeridgian limestone rather than the Portlandian soils that usually define the appellation.
Petit Chablis sits at the outer edge of the Chablis hierarchy, generally planted on the higher, flatter Portlandian ground above the slopes that carry the village and premier cru vineyards. Domaine Bernard Defaix, based at Milly beneath the Côte de Léchet, takes a different route here: the greater part of this cuvée comes from a small parcel of Kimmeridgian soil on the slopes above Milly and Vaillons, a cool site that ripens late and comes into its own in warmer years. Two further parcels at Poinchy and Beines have been added in recent years to build volume. Fermentation runs on indigenous yeasts and the wine is raised entirely in glass-lined tank, so there is no oak between the drinker and the site. It is bottled under screwcap.
Ready on release and worth drinking over the next two to three years. Serve at 10-12°C with freshly shucked oysters, grilled whiting or a goat’s cheese salad.
