Description
Domaine Bernard Defaix Petit Chablis takes most of its fruit from Kimmeridgian soil, which is unusual for an appellation normally planted on the younger Portlandian limestone of the plateau.
Petit Chablis covers the higher ground around the Chablis vineyard, and its wines are typically the leanest and earliest drinking of the four appellation levels. The Defaix family has been based at Milly since the late 1950s and holds the bulk of its vines on the left bank of the Serein. The main parcel behind this cuvée sits on the slopes above Milly and Vaillons on Kimmeridgian marl, a cool site that comes into its own in warmer years. Two smaller parcels recently added at Poinchy and Beines bring extra depth to the blend. Vinification is straightforward and reductive, with no oak, and the wine is bottled under screwcap to preserve its cut.
Drink it over the next two years with oysters, whitebait or fresh goat's cheese. Serve at 10-12°C.
