Domaine Camille Thiriet Bourgogne Rouge En La Place comes from 90-year-old vines on the sandy clay of the La Sablière vineyard.

Camille Thiriet works from Comblanchien at the southern end of the Cote de Nuits, buying and farming parcels that larger houses have tended to overlook, and bottling them with a very light hand in the cellar. This is the first vintage of the domaine's own Bourgogne Rouge, and it comes from the same vineyard as her white, though the red vines are older still. The vineyard's name, La Sablière, refers to the sandy clay soils beneath it, which go a long way to explaining the wine's lifted, floral perfume. The vines are 90 years old and in places older. Fermentation takes place in concrete with 40 per cent whole bunches layered at the bottom of the tank, so that punch-downs and pump-overs do not break the whole berries. The result is elegant and pure-fruited for a regional Burgundy.

Drink over the next five or six years, with roast chicken, charcuterie or a mushroom tart. Serve at 15 to 16 degrees.
