Domaine Cauhapé Jurançon Quintessence du Petit Manseng 375ml 2010

Domaine Cauhapé Jurançon Quintessence du Petit Manseng is the December pick, a heavily shrivelled selection of Petit Manseng bottled in half.

Jurançon lies in the foothills of the Pyrenees south west of Pau, where vines are trained high on wires to escape spring frost and the autumn is long enough to leave fruit hanging into winter. Domaine Cauhapé sits above Monein, where Henri Ramonteu built the estate up to some forty hectares of Gros Manseng and Petit Manseng on clay and silex. The dry foehn wind off Spain shrivels the berries on the vine rather than encouraging botrytis, so the sweet wines are made by passerillage, picked in successive passes from October through to January. Quintessence is the December pass, when the bunches have hung for months and lost much of their water, and it carries 122 grams per litre of residual sugar. It is pure Petit Manseng, fermented slowly and raised in oak.

Concentrated and long, it belongs with foie gras, blue cheese and caramelised fruit desserts, or on its own after a meal; serve at 8 to 10 degrees.
