Description
Domaine Chermette Crémant de Bourgogne Brut is all Chardonnay from one south-west facing site above the family cellars at Le Bois-d'Oingt.
The Crémant de Bourgogne appellation reaches south into the granite country of the Beaujolais, where the Chermette family is best known for Gamay. This wine comes from a single 4.5-hectare parcel just north of the cellars, facing south-west on limestone and clay, soils that suit Chardonnay far better than the dark granite carrying the estate's reds. The wine spends 18 months on lees in bottle with minimal sulphur, is neither fined nor filtered, and takes a small dosage of 4 g/L. The current disgorgement blends the 2021, 2022 and 2023 harvests, a spread of years that adds depth without blunting the wine's clarity. It is made by the traditional method throughout, with the second fermentation in the bottle it is sold in.
Ready on release and good for two to three years. Serve at around 8°C as an aperitif, with oysters or with fried chicken.
