Description
Domaine Comte Abbatucci Faustine Rosé is a dry Corsican rosé made entirely from Sciaccarellu grown on the granite of the Taravo valley.
Jean-Charles Abbatucci farms around twenty hectares at Casalabriva in the Taravo valley of south west Corsica, on decomposed granite, working biodynamically with horses for ploughing and sheep grazing between the rows. His father Antoine spent the 1960s gathering cuttings of Corsican grape varieties that had all but disappeared from the island and planted them in a conservatory parcel, and that collection still underpins the estate. Sciaccarellu, the granite-loving red variety of the Ajaccio hinterland, is naturally pale and highly perfumed, which suits rosé, and Faustine is made from it alone. The fruit is hand picked, direct pressed and fermented with indigenous yeast in vat without additions, then bottled without oak.
Dry, savoury and more textural than pale Provence rosé, it suits grilled fish, charcuterie and Corsican sheep's cheeses; serve at around 10 degrees.
