Recipe

Daube de Boeuf Provençale (Beef Stew Provençal Style)

Ingredients:

  • 1kg beef chuck, cut into large cubes
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 250mL red wine (preferably Rhône)
  • 2 tbsp tomato paste
  • 1 bay leaf
  • 1 sprig thyme
  • Olive oil
  • Salt and pepper, to taste

Instructions:

  1. Marinate beef in wine, garlic, and herbs overnight if possible.
  2. Heat olive oil in a heavy pot, brown the beef in batches, then remove.
  3. Sauté onion and carrot until soft, stir in tomato paste and cook briefly.
  4. Return beef to pot, pour in marinade, cover and simmer gently for 2.5–3 hours.
  5. Season to taste and serve with crusty bread or mashed potatoes.
