Description

Domaine Daniel Bouland Morgon Bellevue Cailloux, in magnum, comes from the grower's earliest-ripening site, a slope so stony it is named for its rocks.

Most of Bouland's old bush vines are rooted in the Morgon climat of Corcelette, in the hilly Haut-Morgon to the north-west of the appellation, and Bellevue is one of several lieux-dits he now bottles separately. It faces south-east and is particularly stony — cailloux means rocks — with plenty of schist running through the granitic sandy base, much as in the Côte du Py. The surface rock traps and radiates warmth, which is why this parcel ripens first. The vines were planted in 1951 and 1987 on 420A rootstock, chosen for very stony ground with almost no topsoil. Vinification matches the Bellevue Sable: natural whole-bunch fermentation, concrete élevage and no fining. Bouland points to tannin as the difference, the Cailloux running bonier and fresher.

A twist of youthful reduction calls for a decant. Serve at 16–18°C with lamb, roast duck or a beef and mushroom pie.
