Domaine Daniel Bouland's Morgon Bellevue Cailloux is the stony half of the Bellevue lieu-dit and the earliest-ripening site at the domaine, bottled in magnum.
Bouland's old bush vines sit mostly within the Corcelette climat of Morgon, in hilly Haut-Morgon to the north-west of the appellation, and Bellevue is one of the lieux-dits he now bottles on its own. Cailloux means rocks, and the site is exactly that: south-east-facing, with plenty of schist running through a granitic, sandy base soil, much as in the Côte du Py. The stone on the surface traps and radiates warmth, so this parcel ripens ahead of every other he farms. The vines were planted in 1951 and 1987 on 420A rootstock, chosen for very stony ground with no topsoil, and they are a little older than those in the Sable parcel. Winemaking is identical — natural whole-bunch fermentation, concrete-tank élevage, no fining — and the wine comes out the firmer and more tightly structured of the pair.
Worth two to four years in magnum, or decant it now. Serve with braised beef, duck confit or a mushroom gratin at 16–17°C.
