Domaine Daniel Bouland Morgon Bellevue Cailloux comes from the domaine's earliest-ripening site, a stony south-east slope within Corcelette.
Bellevue is one of several lieux-dits within the Corcelette climat of Haut-Morgon that Daniel Bouland now bottles separately. It faces south-east and is unusually stony, which is what cailloux means, with plenty of schist running through a granitic, sandy base soil much as on the Côte du Py. All that surface rock traps and radiates warmth, making it the earliest-ripening of Bouland's sites. The vines were planted in 1951 and 1987, on 420A rootstock chosen for very stony ground with little topsoil. Winemaking matches the Bellevue Sable bottling: a natural whole-bunch fermentation, élevage in concrete tank and no fining. Bouland attributes the difference between the two to tannin, the Cailloux being bonier and fresher, with a little more intensity and slightly higher acidity. A twist of youthful reduction on opening is normal here and comes from those thin, rocky soils.
A decant or time in the glass settles it; drink over the next five to eight years. Serve at 16-18°C with roast pork, duck or a hard sheep's cheese.
