Domaine Daniel Bouland Morgon Bellevue Cailloux 3L DOUBLE MAGNUM 2023

Domaine Daniel Bouland's Morgon Bellevue Cailloux is the stony counterpart to his Bellevue Sable, drawn from the estate's earliest-ripening site and bottled as a three-litre double magnum.

Bouland's holdings centre on the Morgon climat of Corcelette, in hilly Haut-Morgon to the north-west of the appellation, and Bellevue is one of the lieux-dits he now keeps apart. Cailloux means stones, and the name is literal: a south-east-facing site with plenty of schist running through a granitic, sandy base soil, much as at the Côte du Py. The rock on the surface traps and radiates warmth, which makes this the first of his parcels to ripen. The vines were planted in three stages, in 1937, 1951 and 1967, on 420A rootstock chosen for very stony ground with almost no topsoil, and they are a shade older than those in the Sable parcel. Winemaking is the same: low yields, natural whole-bunch fermentation, no fining. The result is the deeper, more tightly wound of the two Bellevue cuvées, with firmer tannin at this stage.

Worth two to five years in this format, or decant it young. Serve with braised beef, duck confit or a gratin dauphinois at around 16–17°C.
