Domaine Daniel Bouland Morgon Corcelette Vieilles Vignes Cailloux, in three-litre double magnum, comes from the rockier soils of the Corcelette lieu-dit.
Corcelette lies in the hilly north-western part of Morgon, away from the better-known Côte du Py, and its granitic sands are known for perfume and finer tannins. Daniel Bouland farms several parcels here and bottles them separately according to soil, a practice he formalised on the labels from the 2019 vintage. This cuvée comes from the stonier ground, cailloux meaning stones, with vines only a little younger than the century-old plantings that go into the Sable version. The rockier soil gives a slightly more structured Morgon than its sandy sibling, with more grip and a firmer close. As with all the domaine's wines, yields are very low and the fruit is fermented as whole bunches with indigenous yeasts, the must foot-trodden late in fermentation, and the wine raised without fining.
A double magnum built for the cellar, it will reward a decade and suits slow-cooked pork, game birds or a whole roast chicken. Serve at 14-16°C.
