Domaine Daniel Bouland Morgon Délys is the concrete-raised, younger-vine bottling from the lieu-dit directly behind the winery.
Les Délys forms part of the Corcelette climat in Morgon, downslope from Bellevue and immediately behind Daniel Bouland's house and cellar, which makes it something close to his back garden. As he does elsewhere, Bouland splits his holding here into two cuvées: an old-vine version raised in foudre, and this bottling from younger vines raised in concrete. The vines were planted in 1978 and 1980 in the deep granitic sand typical of Les Délys, a soil that brings roundness and an almost Burgundian texture rather than the firm structure associated with Morgon's schist. Fermentation is natural and whole-bunch, as throughout the range, with no new oak and no additions beyond a minimum of sulphur. The concrete élevage keeps the fruit fresh and the tannins fine.
Drink now and over the next six or seven years, with charcuterie, roast pork or a duck salad. Serve at 16 degrees.
