Domaine Daniel Bouland Morgon Délys is the younger-vine, concrete-raised half of the grower’s holding in the lieu-dit behind his own house.
Les Délys belongs to the Corcelette climat, downslope from Bellevue and immediately behind Daniel Bouland’s home and winery; he describes it as his back garden. He divides the parcel into two cuvées, an old-vine version raised in foudre and this one, from vines planted in 1978 and 1980, raised in concrete so that the fruit stays unmarked. The deep granitic sand typical of Les Délys brings roundness and an almost Burgundian texture. Fermentation is natural and whole-bunch, as across the range. This is among the more refined of Bouland’s wines in the vintage, sweetly ripe yet vivacious, with a structure a shade firmer than his Corcelette, though the sheer succulence of the fruit largely conceals it. The finish is long and grippy, closing on dark minerals and a crack of red pepper.
Drinking well now and holding for six to eight years. Serve at 16-18°C with charcuterie, roast pork or grilled sausages.
