Description
Délys is a single hectare of Morgon vines planted in 1926 on the Chiroubles border, bottled here in magnum.
This wine used to reach Australia simply as Morgon Vieilles Vignes; it is now labelled with its lieu-dit, Les Délys, and the planting year of its vines. The parcel sits at the end of the Corcelette valley on a south-east-facing slope, at the historically high density of 10,000 vines per hectare, and the gnarled century-old plants yield very little — so little that Daniel Bouland has said he would replant if he could source the grafting material. The site is worked as the rest of the domaine is, with hand harvesting, whole-bunch fermentation using indigenous yeasts, foot treading to prolong the ferment and no new oak. Deep and chewy in its youth, it is built for the cellar and has a length of flavour that is rare in Beaujolais.
Give it five to ten years, longer in magnum; serve at 16–18°C with roast beef, game or a mature hard cheese.
