Moules Marinières (Steamed Mussels in White Wine Sauce)
Ingredients:
- 2 kg fresh mussels, cleaned and debearded
- 2 shallots, finely chopped
- 3 garlic cloves, minced
- 1 cup Domaine Daniel Dampt Chablis 375mL 2023 (or a comparable Chablis)
- 1/2 cup fish or light chicken stock
- Juice of 1 lemon
- 2 tbsp unsalted butter
- Fresh parsley, chopped (for garnish)
- Salt and pepper, to taste
Instructions:
- Rinse the mussels under cold water, discarding any that remain open after a gentle tap.
- In a large pot, melt the butter over medium heat. Add the shallots and garlic, and sauté until softened, about 2 minutes.
- Pour in the Chablis and stock, then add the lemon juice. Bring the mixture to a simmer.
- Add the mussels to the pot, cover, and cook for 5–7 minutes until they open. Discard any mussels that do not open.
- Taste the broth and adjust seasoning with salt and pepper if needed.
- Spoon the mussels into bowls, drizzle with some of the cooking broth, and garnish with freshly chopped parsley.
