Pan-Seared Sea Bass with Lemon Caper Sauce
Ingredients:
- 2 sea bass fillets (about 200g each)
- Salt and pepper, to taste
- 2 tbsp olive oil
- 2 garlic cloves, minced
- Juice of 1 lemon
- 1 tbsp capers, rinsed and drained
- 2 tbsp unsalted butter
- Fresh parsley, chopped (for garnish)
- Optional: a splash of white wine
Instructions:
- Season the sea bass fillets with salt and pepper on both sides.
- Heat the olive oil in a non-stick skillet over medium-high heat. Place the fillets skin-side down and cook for 3–4 minutes until the skin is crispy. Flip the fillets and cook for an additional 2 minutes until just cooked through. Remove from the pan and set aside.
- Lower the heat to medium and add the minced garlic and capers to the pan. Sauté for about 30 seconds until fragrant, then add the lemon juice (and white wine, if using). Allow the sauce to simmer for a minute.
- Stir in the butter until it melts and the sauce becomes silky. Taste and adjust seasoning with salt and pepper if needed.
- Plate the sea bass fillets and drizzle the lemon caper sauce over them. Garnish with chopped fresh parsley.
