Domaine de l'Arlot Nuits Saint Georges 1er Cru Clos des Forêts in magnum is the domaine's seven-hectare walled monopole, bottled in the 1.5-litre format.

The Clos des Forêts Saint-Georges is a walled vineyard at Prémeaux-Prissey at the southern end of Nuits-Saint-Georges, running up the slope from deeper clay at its base to thin, stony limestone at the top. The sections are picked and fermented apart and blended later, which gives the wine both weight in the middle and a firm edge. It is the more structured of Domaine de l'Arlot's two monopoles. Fermentation uses indigenous yeasts and a good share of whole bunches, extraction is by gentle infusion, and the wine matures in barrel with a measured proportion of new oak. In magnum the ratio of wine to oxygen is more favourable, so the wine evolves more slowly and generally holds its freshness for longer.

A format worth cellaring; give it several years and decant before serving. Serve at 16–18°C with roast beef, guinea fowl or a mature hard cheese.
