Domaine de l'Arlot Nuits Saint Georges 1er Cru Clos des Forêts is the sterner of the domaine's two walled monopoles, just over seven hectares at Prémeaux-Prissey.

Nuits-Saint-Georges runs for several kilometres along the Côte de Nuits, and its southern end at Prémeaux-Prissey gives the more perfumed reading of the appellation. The Clos des Forêts Saint-Georges was bought by the merchant Jules Belin in 1891 and has been part of the same walled property ever since; AXA Millésimes acquired the estate in 1987. The clos climbs the slope, deeper clay at the foot giving way to thin stony limestone at the top, and each section is picked and fermented apart before blending, which is where the wine gets both flesh and frame. The vines average around fifty years. Under Géraldine Godot, who has directed the estate since 2014, fermentation runs on indigenous yeasts, with whole bunches when the stems are ripe, extraction is gentle and new oak is kept in proportion. Farming has been organic since 2000 and biodynamic since 2003.

A wine to cellar rather than to open young; decant it if you must. Serve at 16-18°C with roast beef, guinea fowl or a mature hard cheese.
