Description

Domaine de la Grosse Pierre Chiroubles is the domaine's principal cuvée, from fifty-year-old vines around the house at 350 metres.

Chiroubles is the highest of the ten Beaujolais crus and generally the lightest and most perfumed, its granite slopes sitting well above the neighbouring villages. This wine comes from the family property in the heart of the appellation, where the vines are about fifty years old, planted at 9,000 per hectare on decomposed granite. The parcel faces east and catches the first sun of the morning, which suits a site where ripening is never a given. Pauline Passot uses a combination of techniques for the fermentation and extracts very gently, with about half the fruit fermenting carbonically to keep the aromatics and the tannins light. This vintage was matured for seven months in concrete rather than oak, which leaves the granite character of the site unobscured.

Drinking well now and good for four or five years. Serve lightly chilled at 14-16°C with roast chicken, charcuterie or a mushroom tart.
