Domaine Denis Mortet Gevrey-Chambertin 1er Cru Lavaux St-Jacques is blended from five parcels across 1.2 hectares and is the estate's signature cuvée.

Lavaux St-Jacques sits at the mouth of the Combe de Lavaux on the northern side of Gevrey-Chambertin, immediately beside Clos St-Jacques but without that vineyard's protective walls, so it lies open to the cool northern airstreams that flow down the valley. It is always the last site the domaine picks. The soils are stony and shallow, and the combination of altitude, exposure and rock gives a wine of depth and lift rather than sheer weight. Yields here came in at just 25 hl/ha, which concentrates the fruit further. All the crop was destemmed, roughly 30% by hand so the berries stay whole, and only 30% new oak was used, continuing the domaine's move away from the heavier oak regimes of earlier decades. This holding is widely regarded as the benchmark for the vineyard.

Give it six to eight years; it will run for decades. Serve at 16-18°C with roast duck, beef bourguignon or mature Comté.
