Domaine des Baumard Coteaux du Layon Clos St Catherine 2014

Domaine des Baumard Coteaux du Layon Clos St Catherine is the estate's flagship sweet Chenin Blanc, from a single south-facing parcel of schist at Rochefort-sur-Loire.

The Clos St Catherine is a small, steeply pitched terrace facing south over the Layon on schist, and it has been the Baumard family's finest Coteaux du Layon site for generations. The family has grown vines in Anjou since the seventeenth century, and the estate is now directed by Florent Baumard, who also makes Savennieres and Quarts de Chaume. Chenin Blanc here ripens slowly and is picked in successive tries, taking in botrytised and passerille berries as they come; pressing is gentle and fermentation is carried out in temperature-controlled tank rather than barrel, so that the schist and the fruit lead rather than wood. This vintage stopped at 125 grams per litre of residual sugar.

Concentrated but tightly strung, it will drink well for many years and matches foie gras, blue cheese and apple or quince desserts; serve at around 8 to 10 degrees.
