Pompe à l'Huile (Olive Oil Brioche from Provence)
Ingredients:
- 500g plain flour
- 100g sugar
- 2 eggs
- 100mL extra virgin olive oil
- 100mL orange blossom water
- 15g fresh yeast
- Pinch of salt
- Zest of 1 orange
Instructions:
- Dissolve yeast in a little warm water. Combine flour, sugar, salt, orange zest, eggs, olive oil, and orange blossom water in a large bowl.
- Add yeast mixture and knead into a soft dough. Cover and let rise for 2 hours.
- Roll out into a flat oval, score decorative cuts across the top, and let rise again.
- Bake at 180°C for 20–25 minutes until golden.
