Domaine des Croix Saint-Romain Combe Bazin is a white Burgundy from a steep, stony site on white limestone soils, made in tiny quantity.
Saint-Romain lies in the hills behind Meursault and Auxey-Duresses, higher and cooler than its neighbours, which makes it a reliable source of taut, chalky Chardonnay. Combe Bazin is only the third vintage of this cuvée for Domaine des Croix. The parcel covers a single hectare on a steep, stony slope with pale limestone soils, and it yields very little; David Croix is replanting most of it with mass-selection cuttings. The two barrels made here came from the finest fifteen per cent of the vines. The grapes were lightly crushed and given a gentle three-hour press, then fermented spontaneously and aged for a year on lees in used 500-litre barrels, followed by six months in concrete. Croix describes the classic Combe Bazin as a Saint-Romain that fills out the palate, and that generosity is balanced here by the altitude and shallow soils.
Drink over the next six to eight years with roast chicken, scallops or a soft goat's cheese. Serve at 10-12°C.
