Domaine du Pélican Arbois Savagnin Ouillé is a Jura white made in the topped-up style, from the Arbois estate founded by a Burgundian vigneron.
Arbois is the largest appellation of the Jura and one of the first in France to be granted appellation status, in 1936. Savagnin is the region's signature white grape and can be handled two ways: left to age under a veil of yeast, or ouillé, meaning the barrels are topped up regularly so that no veil forms. This is the latter, and it shows the grape in its more Burgundian guise. Domaine du Pélican was established in 2012 by Guillaume d'Angerville, whose family estate lies in Volnay, on marl and limestone soils around Arbois. The vines are farmed organically and biodynamically, and the winemaking is deliberately unhurried.
Serve at around 12 degrees alongside roast chicken, a hard mountain cheese such as Comté, or a plate of charcuterie.
