Domaine Faiveley Nuits-Saint-Georges 'Aux Chaignots' Premier Cru is a Pinot Noir from the northern end of Nuits-Saint-Georges, close to the border with Vosne-Romanée.
Aux Chaignots lies on the upper slope in the sector above the town, a short walk from Vosne, on stony limestone with only a thin covering of soil. Wines from this northern half of the commune are generally more finely drawn and less muscular than those from the southern stretch towards Prémeaux. Nuits-Saint-Georges has no Grand Cru, but its Premiers Crus run to more than forty climats and include several long regarded as the equal of Grands Crus elsewhere. Faiveley has been based in the town since 1825 and is now in its seventh generation, vinifying each climat separately and ageing in French oak barrels.
Serve at around 16 degrees with duck, game birds or roast veal. It is best given five years and will hold for a decade or more.
