Daube de Bœuf Provençale (Provençal Beef Stew)
Ingredients:
- 1kg beef chuck, cubed
- 2 carrots, sliced
- 2 onions, chopped
- 3 garlic cloves, minced
- 500mL red wine
- 2 tbsp tomato paste
- 1 orange zest strip
- 2 bay leaves
- 1 sprig thyme
- Black olives (optional)
- Salt and pepper, to taste
- Olive oil
Instructions:
- Marinate beef overnight with wine, herbs, garlic, and orange zest.
- Drain and brown meat in olive oil. Remove and set aside.
- Sauté onions and carrots, add tomato paste and cook briefly.
- Return beef to pot, pour in marinade, and simmer gently for 3 hours.
- Add olives if using, adjust seasoning, and serve with mashed potatoes or crusty bread.
