Description
Clos Habert is a three-hectare site in Montlouis-sur-Loire that François Chidaine bottles in what he calls a tendre, or gently dry, style.
Montlouis sits on the left bank of the Loire opposite Vouvray and works with Chenin Blanc alone. Chidaine makes several cuvées that would traditionally be called demi-sec, but he prefers the word tendre, since the level of sweetness fluctuates widely with the season and the balance between sugar and acid matters more than the residual figure. As with the greats of the Mosel, these are wines powered by ripeness rather than sweetness, and they always finish tangy and fresh. The clos lies just above Clos du Breuil on a plateau where the silex gives way to broken chalk and clay. Sixty-year-old guyot and bush-trained vines are hand-harvested in tris at very low yields of around 30 hl/ha, and the wine is raised in large-format barrel.
Drinking well now and capable of a decade or more; serve at 10-12°C with pork terrine, roast pork with apple or a mild blue cheese.
