Description
Domaine François Chidaine Touraine Sauvignon Blanc comes from organic and biodynamic vines less than ten kilometres from the domaine's Montlouis base.
François Chidaine is revered for his Chenin Blanc from Montlouis and Vouvray, and this Sauvignon sits at the other end of his range in price, if not in intent. The fruit is cropped at Chissay-en-Touraine and Saint-Julien-de-Chédon, within the broad Touraine appellation that follows the middle Loire and its tributaries. Viticulture here is strictly organic and biodynamic. The juice was fermented naturally with a high proportion of solids, which builds texture, then matured on lees until bottling. The house approach applies as it does to the Chenins: terroir first and variety second, so the wine leans towards stone fruit, pith and gentle spice rather than the pungent herbaceous register to which the grape is often reduced. Depth of flavour is the surprise at this price, together with a bright, driven finish that keeps the wine moving.
Best drunk over the next two or three years. Serve at 10-12°C with grilled asparagus, goat's cheese or pan-fried whiting.
