Instructions:
- Preheat your oven to 200°C. On a lightly floured surface, roll out the puff pastry and transfer it to a baking sheet lined with parchment paper.
- In a bowl, combine the diced eggplant, zucchini, bell peppers, red onion, and garlic with olive oil, dried thyme, salt, and pepper.
