  • 1 red onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil

  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 200°C. On a lightly floured surface, roll out the puff pastry and transfer it to a baking sheet lined with parchment paper.
  2. In a bowl, combine the diced eggplant, zucchini, bell peppers, red onion, and garlic with olive oil, dried thyme, salt, and pepper.
  3. Spread the vegetable mixture evenly over the puff pastry, leaving a small border around the edges. If desired, sprinkle vegan cheese on top.
  4. Bake in the preheated oven for 25–30 minutes until the pastry is golden and crisp and the vegetables are tender.
