Domaine Gérard Boulay Sancerre à Chavignol 2021

Domaine Gérard Boulay Sancerre à Chavignol is drawn entirely from the limestone slopes of Chavignol, the most celebrated village of the appellation.

Chavignol lies in a fold of hills west of the town of Sancerre, and its steep limestone slopes carry several of the appellation's greatest sites. Domaine Gérard Boulay is based there, and this is his entry-level wine, from mature vines of thirty-five to forty years of age rooted entirely in Chavignol limestone. The parcels are largely sloping vineyards on the lower flanks of the hillside terroirs of Les Chasseignes, Les Longues Fins and Le Rue de Veaux, with fruit from Boulay's younger vines on the great hillside of La Grande Côte included as well. The juice is naturally fermented and aged for eight months in tank on lees, with a small volume fermented in a single large wooden cask. It is the only blended cuvée in the range, and even here the finesse and stony, saline character that made this grower's reputation come through clearly.

Drinking well now and capable of five years or more. Serve at 10-12°C with Crottin de Chavignol, grilled whiting or asparagus.
