Description

Domaine Gérard Boulay Sancerre à Chavignol is drawn entirely from limestone vineyards in Chavignol, the appellation's most celebrated hamlet.

Most Sancerre comes from the flatter, more fertile ground of the plains; Chavignol is the exception, a cluster of steep limestone slopes that produce the appellation's densest and longest-lived Sauvignon Blanc. Gérard Boulay farms there and nowhere else. This bottling comes from mature vines of 35 to 50 years on the lower flanks of Les Chasseignes, Les Longues Fins and La Rue de Veaux, with a portion of younger-vine fruit from the great hillside of La Grande Côte folded in. The juice ferments spontaneously and rests eight months on lees in tank, apart from a small volume fermented in a single large wooden cask. It is the only blended wine in the range, and even so it carries the finesse, texture and stony, saline character that have made Boulay one of the most respected growers in France.

Good now and will develop over five to six years. Serve at 11-12°C with goat's cheese, grilled whiting or a chicken salad.
