Domaine Gérard Boulay Sancerre Comtesse 2020

Domaine Gérard Boulay Sancerre Comtesse comes from 0.40 hectares of seventy-year-old vines at the chalky heart of Les Monts-Damnés.

Chavignol is the most celebrated of Sancerre's villages, and Comtesse is the lieu-dit locals have long held to be its finest single terroir. Thibaut Boulay records that by the Universal Exhibition in Paris in 1878 the site's wines were already being served at the best tables of northern France. The soil is pure Kimmeridgian limestone with a miserly thirty to forty centimetres of topsoil over solid bedrock, so the vines root straight into rock. The stony ground absorbs heat during the day and radiates it back at night, which is why the site ripens fully while holding its acidity. Gérard Boulay's family has farmed here for generations, and the wine that results has the clarity and drive that make this address one of the references for the appellation.

It rewards five to ten years in bottle. Serve at 10–12°C with Crottin de Chavignol, poached crayfish or roast veal.
