Domaine Gérard Boulay Sancerre Rosé Sibylle 2022

Domaine Gérard Boulay Sancerre Rosé Sibylle is made from Pinot Noir vines on the steep Chavignol hillside planted expressly for rosé.

Sancerre is not the first place most people look for rosé, but around a tenth of the appellation is planted to Pinot Noir and several of its best growers make serious examples. Boulay’s comes from roughly 0.8 hectares of thirty-five- to fifty-year-old Pinot Noir on the steep slopes of Chavignol, grown specifically for this wine, with a little more fruit drawn in during seasons that are difficult for reds. The fruit is hand-harvested and left to macerate for twenty-four hours, and the press wine and free-run juice are fermented separately with wild yeasts. Boulay blocks the malolactic conversion to hold on to tension, and no oak is used at any stage. The result is structured rather than pale and simple, with red fruit, spice and limestone freshness, and enough flesh to carry through a meal.

Drink over the next two years. Serve at 10-12°C with grilled prawns, charcuterie or a salade niçoise.
