Grilled Portobello Steaks with Herbed Quinoa (Vegan)
Ingredients:
- 4 large portobello mushroom caps, stems removed
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 small red bell pepper, diced
- 1 small zucchini, diced
- 1 garlic clove, minced
- 1 tbsp chopped fresh basil
- 1 tbsp chopped fresh parsley
- Juice of 1 lemon
Instructions:
- Preheat your grill or grill pan over medium-high heat. Brush the portobello mushrooms with olive oil and season with salt and pepper. Grill for 4–5 minutes per side until tender and nicely charred. Set aside.
- In a medium saucepan, combine the quinoa and vegetable broth. Bring to a simmer, cover, and cook for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
