Ingredients:

  • 4 large portobello mushroom caps, stems removed
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 small red bell pepper, diced
  • 1 small zucchini, diced
  • 1 garlic clove, minced
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley
  • Juice of 1 lemon

Instructions:

  1. Preheat your grill or grill pan over medium-high heat. Brush the portobello mushrooms with olive oil and season with salt and pepper. Grill for 4–5 minutes per side until tender and nicely charred. Set aside.
  2. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a simmer, cover, and cook for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  3. In a separate skillet, heat a drizzle of olive oil over medium heat. Sauté the garlic, red bell pepper, and zucchini until just softened, about 4 minutes.
  4. Mix the sautéed vegetables into the cooked quinoa along with the fresh basil, parsley, and lemon juice. Adjust seasoning with salt and pepper.
