Domaine Goisot Bourgogne Aligoté is built around a parcel of 90-year-old vines on the high slopes above Saint-Bris.
Aligoté is Burgundy's second white grape and rarely repays casual treatment: it needs old vines and the right soil to give anything beyond simple acidity. Goisot, based at Saint-Bris in the Auxerrois near Chablis, farms biodynamically and has the raw material to make the case. The core vineyard is a parcel of 90-year-old Aligoté Doré planted north-west of the village on Barrémien soil, an ancient, dense clay littered with blue-grey fossilised oyster shells several inches long, hard to work and giving very small berries. Younger vines in the lieux-dits of Croix Rougeot, Côte de Coutance and Côte de la Canne fill out the blend. Fermentation is with native yeasts and the wine is raised entirely in tank, so what texture it has comes from ripe fruit and low yields rather than wood.
Drink over the next three to four years. Serve at 10-12°C with oysters, gougères or a simple grilled fish.
