Domaine Goisot Bourgogne Côtes d'Auxerre Corps de Garde Rouge is a biodynamic Pinot Noir from three mature plots on the Kimmeridgian limestone slopes above Auxerre.
The Côtes d'Auxerre is the northern outpost of red Burgundy, closer to Chablis than to the Côte d’Or and planted on much the same Kimmeridgian limestone. Corps de Garde is Goisot’s selection from three plots of 40- to 70-year-old vines in Côte de la Ronce and Haut de la Ronce, Côte de Tue Chien and Gueules de Loup, where the limestone is mixed with red-brown and white clays. The farming is biodynamic. All the grapes are destemmed and there is no pigeage: Goisot prefers to draw tannin gently from the skins alone rather than from the pips. Maceration and fermentation take place in open wood fermenters, after which the wine goes into 300-litre Burgundian barriques, 20 per cent new and the remainder between one and five years old, for 12 months.
Drinking now and over the next six to eight years. Serve at 16-18°C with roast duck, coq au vin or a mushroom tart.
