Domaine Goisot Bourgogne Côtes d'Auxerre Gondonne Blanc 2021

Domaine Goisot Bourgogne Côtes d'Auxerre Gondonne Blanc is a single-vineyard Chardonnay planted with massale cuttings taken from grand cru Chablis.

The Côtes d'Auxerre sits in the Yonne, between Chablis and the Loire, and Domaine Goisot is its leading name. La Gondonne lies on dense soils of blue clay, marl and limestone, thick with the small comma-shaped exogyra virgula fossils that mark the best ground in the district. The vines are a mass selection from the Les Clos holdings of Raveneau and Dauvissat, both families with close ties to the Goisots, and the planting was deliberate: the family believes Gondonne is the closest the Côtes d'Auxerre comes to that grand cru. The vineyards are farmed biodynamically. Of the domaine's three single-vineyard whites this is the most structured and typically the most complex, a wine that takes its time to open and rewards the wait.

Best given a year or two and worth cellaring six to eight years. Serve at 10-12°C with oysters, roast fish or a well-aged Comté.
