Domaine Goisot Gueules de Loup is a single-vineyard Chardonnay from a one-hectare limestone site in the Côtes d’Auxerre, farmed biodynamically.
The Côtes d’Auxerre lies in the far north of Burgundy, closer to Chablis than to the Côte d’Or, and the Goisot family has spent decades mapping its patchwork of limestone parcels. Gueules de Loup takes its name from the snapdragons that grow in its soils and is among the prettiest sites in the appellation: a single hectare facing south to south-east on almost pure Portlandian limestone downwash. The vines are over 40 years old. Farming is biodynamic, and the wine is matured in barrel on its lees, which fills out the mid-palate without covering the mineral line the limestone gives. The Goisots consider the terroir close to that of the Chablis premier cru Vaillons, though the wine carries more of the breadth and roundness associated with white Burgundy proper.
Drinking well from release and worth five years in the cellar. Serve at 10-12°C with roast chicken, gruyère tart or grilled snapper.
