Domaine Goisot Saint-Bris Exogyra Virgula Blanc 2021

Domaine Goisot Exogyra Virgula is a Saint-Bris named after the fossil oyster shells that fill the soils it grows on.

Exogyra virgula is the comma-shaped shell of an ancient shellfish, abundant in the Kimmeridgian limestone of northern Burgundy and the same marker found in the great vineyards of Chablis. That geology brings salinity and a smoky freshness to the wines here. The old vines behind this cuvée sit on north-facing slopes between 170 and 200 metres, carpeted with the fossils, and they are sélection massale rather than clonal material. The combination of pure limestone soils, biodynamic farming, cooler northern conditions and that plant material gives a Sauvignon Blanc with little in common with the variety as it is usually understood, more mineral and taut than overtly aromatic. Saint-Bris remains the only Burgundy appellation for the grape.

Drink now and over the next three to four years. Serve at 10-12°C with oysters, goat's cheese or a herb salad.
