Domaine Goisot Saint-Bris Exogyra Virgula Blanc 2022

Domaine Goisot Saint-Bris Exogyra Virgula is named for the comma-shaped fossil shells that carpet its north-facing limestone slopes.

Saint-Bris is the only appellation in Burgundy for Sauvignon Blanc, tucked in the Auxerrois near Chablis, and the Goisot family farms it biodynamically. Exogyra virgula is the fossil oyster whose comma-shaped shells give the Kimmeridgian limestone here its name and much of its character; the same rock underlies the best of Chablis and brings a comparable salinity and smoky freshness. These old vines sit on north-facing slopes at 170 to 200 metres, on soil thick with the fossils. They are sélection massale rather than clonal plantings, and the combination of that material, the pure limestone, the farming and the cool northern climate produces a Sauvignon with little in common with the variety’s better-known expressions.

Drinking well now and worth four or five years. Serve at 10-12°C with oysters, grilled whiting or a goat’s cheese salad.
