Domaine Goisot Saint-Bris La Ronce Blanc is a biodynamic field blend of Sauvignon Gris and Sauvignon Blanc from the north-facing section of the La Ronce vineyard.
Saint-Bris is the one appellation in Burgundy given over to Sauvignon, sitting just south-west of Chablis on Kimmeridgian and Portlandian limestone. Jean-Hugues and Guilhem Goisot farm biodynamically at Saint-Bris-le-Vineux and are the reference growers for both this appellation and neighbouring Côtes d'Auxerre. La Ronce is a newer cuvée: the north-facing part of the vineyard qualifies for the Saint-Bris appellation, and Guilhem planted it between 2012 and 2015 with the intention of making an old-style field blend of the kind, as he puts it, his grandparents used to make, with the two Sauvignons interplanted rather than blended after the fact. The wine was fermented with wild yeasts and raised in tank for nineteen months, with about ten per cent in earthenware amphorae for added savour.
Ready now and holding for four or five years; serve at 10–12°C with goat's cheese, grilled asparagus or river fish.
