Description
Moury is Domaine Goisot's richer Saint-Bris, a Sauvignon Blanc from a single 1.3-hectare parcel on Barrois limestone.
Saint-Bris is the curiosity of northern Burgundy: the only appellation in the region given over to Sauvignon Blanc rather than Chardonnay or Aligoté, sitting a few kilometres from Chablis near Auxerre. Goisot makes two wines from the variety, the Exogyra Virgula and this one, and Moury is the fuller and more hedonistic of the pair. Its parcel lies on Portlandian-era Barrois limestone, a stony soil full of pebbles and silty clay that suits the variety well and lends the wine a spicy, mineral core. The texture is considerably fleshier than Sauvignon Blanc usually gives, and there is an intense saline character running through it that owes more to the limestone than to the grape.
Good now and worth three to five years; serve at 10-12°C with asparagus, fresh goat's cheese or grilled fish.
