Description
Les Fairendes is one of the upper-slope lieux-dits within Chassagne-Montrachet's premier cru Morgeot, and Henri Germain has named it on the label since 2012.
Morgeot is the largest premier cru of Chassagne-Montrachet, so large that some twenty separate lieux-dits may be bottled under its name, and its quality varies with position. The best sites lie in the upper sector above the main road, on poorer, paler soils that restrain vigour; Les Fairendes is one of them, sitting just below Les Caillerets. Thierry Pillot, who owns nothing there and so has no stake in the claim, has repeated his grandfather's view that Fairendes is the finest terroir within Morgeot, and Bibendum spent years encouraging Jean-François Germain to put the vineyard name on the label, which he did from the 2012 vintage. The domaine's approach is classic Côte de Beaune: barrel fermentation, a modest proportion of new wood and unhurried ageing on lees.
Worth three to five years and capable of a decade. Serve at 10-12°C with roast chicken, scallops or a chicken and leek pie.
